In the culinary landscape, bread usually claims a prominent seat. However, for those of us watching our carb intake, traditional bread often feels off-limits. That's why I was excited to stumble upon this 0 carb bread recipe.

Ingredients
  

  • Here's what you'll need to whip up this delicious 0 carb bread:
  • - 1 cup Wholesome Yum Blanched Almond Flour
  • - 1/4 cup Wholesome Yum Coconut Flour
  • - 2 tsp Baking Powder
  • - 1/4 tsp Sea Salt
  • - 1/3 cup Unsalted Butter or 5 tbsp + 1 tsp; measured solid, then melted; can substitute with coconut oil for a dairy-free option
  • - 12 Large Egg Whites ~1 1/2 cups, at room temperature
  • - Optional Ingredients recommended:
  • - 1 tbsp Besti Monk Fruit Allulose Blend you can replace it with any sweetener or skip entirely
  • - 1/4 tsp Xanthan Gum for improved texture—omit for paleo
  • - 1/4 tsp Cream of Tartar this assists in whipping the egg whites
  • - 1 tsp Garlic Powder optional, adds a nice flavor touch
  • - 1 tsp Onion Powder optional, pairs wonderfully with the garlic

Instructions
 

Step 1: Prepare Your Oven and Pan

  • Preheat your oven to 325 degrees Fahrenheit (about 163 degrees Celsius). As it heats, grab an 8 1/2 x 4 1/2 inch loaf pan. Line it with parchment paper, allowing extra paper to hang over the edges. This little trick is perfect for removing your bread later!

Step 2: Combine the Dry Ingredients

  • In a large food processor, combine the almond flour, coconut flour, baking powder, sea salt, garlic powder, onion powder, and xanthan gum. Pulse the mixture a few times until everything is well blended. This creates the flavor base for your bread.

Step 3: Add the Butter

  • Next, pour the melted butter into the food processor with your dry mixture. Pulse again until the mixture becomes crumbly. The butter is the secret ingredient that makes this bread wonderfully rich and decadent.

Step 4: Whip Those Egg Whites

  • In a large bowl, use a hand mixer to beat the egg whites along with the cream of tartar. You want to whip them until stiff peaks form. This should take just a couple of minutes. Remember, if your bowl is too small, you’ll be scrubbing egg whites off the counter later!

Step 5: Mix Wet and Dry Ingredients

  • Carefully add half of the whipped egg whites to the food processor with your flour mixture. Pulse two or three times until just combined. Don’t over-mix; we want to keep it light and fluffy!

Step 6: Fold It Together

  • Once combined, transfer the contents of the food processor into the bowl with the remaining egg whites. Gently fold the mixture together until there are no visible streaks. Use a spatula and be delicate; the air in the whites is your best friend.

Step 7: Shape and Bake

  • Spoon the batter into your lined loaf pan and smooth the top. For a rounded top, gently push the batter toward the center. Place it in the oven and bake for about 40 minutes. At this point, the top should be a lovely golden brown. Tent the loaf with aluminum foil to avoid over-browning, and bake for an additional 30 to 45 minutes until the center is set. The internal temperature should hit around 200 degrees Fahrenheit.

Step 8: Cool and Enjoy

  • Once baked, let your bread cool completely in the pan before carefully lifting it out using the parchment paper. Slice your gorgeous 0 carb bread and enjoy!

Notes

- Use Room Temperature Eggs: Letting your egg whites sit at room temperature really helps them whip up better.
- Don’t Over-mix: Make sure to fold instead of stir when combining the ingredients to retain air in the egg whites.
- Customize Flavors: Feel free to swap the garlic and onion powders for herbs like rosemary or thyme for an Italian twist.
- Check for Doneness: The best test for baked bread is tapping the bottom; it should sound hollow when fully cooked.
- Cool Completely: Make sure to let the bread cool entirely before slicing for cleaner, better-looking slices.
