  • Juice of 1 lime
  • 1/4 cup mayonnaise
  • 1/4 teaspoon sea salt

  • Freshly ground black pepper to taste
  • 1 pound fresh shrimp peeled and deveined (tails left on)
  • 14 ounces bag of pre-shredded coleslaw or 3 cups finely shredded cabbage
  • 1 tablespoon taco spice mix
  • 1 teaspoon onion powder
  • Avocado oil for frying
  • Freshly ground black pepper to taste
  • 9 soft corn tortillas
  • 1/2 small bunch fresh cilantro finely chopped
  • 1/4 cup diced red onion
  • Optional: Easy guacamole

Instructions
 

  • Start by combining the Greek yogurt, lime juice, mayonnaise, sea salt, smoked paprika, taco spice blend, and black pepper in a small bowl. Mix them together thoroughly until smooth. Set this aside. Trust me, this sauce will be a game-changer.
  • In a medium bowl, toss the shrimp with the taco spice mix and onion powder. Make sure every shrimp is coated well. The spices are essential; they create that wonderful flavor we all crave.
  • In a non-stick skillet, heat about two tablespoons of avocado oil over medium-high heat. You'll know it’s ready when shimmering but not smoking.
  • Add the shrimp to the skillet in a single layer. Avoid overcrowding the pan. Let them cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remember, shrimp cooks quickly!
  • While the shrimp cooks, warm the tortillas in a separate pan or directly over a flame for a few seconds until they are pliable. Soft tortillas are crucial for wrapping up those delicious toppings.
  • Lay down each tortilla and add a generous spoonful of the coleslaw mixture. Top with a few pieces of shrimp, a drizzle of that incredible sauce, chopped cilantro, and diced onions. If you’re feeling adventurous, add a scoop of guacamole.
  • These tacos are best enjoyed fresh. Serve them warm, and watch your family and friends devour every last bite!
