  • 1 clove fresh garlic minced or grated
  • 1 pound 450 g medium to large shrimp, peeled and deveined
  • 1 ½ teaspoons homemade Cajun spice blend see tips below
  • 1 tablespoon finely chopped cilantro or fresh parsley, if you prefer
  • ½ teaspoon fresh lemon zest

Step 1: Prepare the Shrimp

  • Start by rinsing the shrimp under cold water, patting them dry with a paper towel. Ensure they are completely deveined to prevent any grit.

Step 2: Make the Cajun Spice Mix

  • In a small bowl, mix together your spices. A simple blend includes paprika, cayenne pepper, garlic powder, onion powder, and a touch of oregano. This mix will fill your kitchen with delightful aromas.

Step 3: Mix the Sauce

  • In another bowl, combine the softened butter with olive oil, garlic, and lemon zest. This rich mixture will coat the shrimp beautifully.

Step 4: Season the Shrimp

  • Add the shrimp to the bowl with the sauce. Sprinkle in the Cajun spice blend. Use your hands or a spoon to toss everything together gently, ensuring every shrimp is coated.

Step 5: Heat the Pan

  • In a large skillet, heat a splash of olive oil over medium-high heat. The pan should be hot but not smoking.

Step 6: Cook the Shrimp

  • Place the shrimp in the skillet in a single layer. Allow them to cook for about 2-3 minutes on each side. The shrimp will turn pink and opaque, a clear indicator that they are ready.

Step 7: Garnish and Serve

  • Once cooked, remove the skillet from heat. Toss the shrimp with the fresh herbs for a burst of freshness. Serve immediately over a bed of rice or alongside your favorite sides.

  1. Quality Shrimp Matters: Always go for fresh or frozen shrimp rather than pre-cooked. This way, you get to control the cooking process.
  2. Don’t Overcook: Shrimp cooks quickly—you want it just right! Overcooked shrimp can become tough.
  3. Adjust the Heat: If you’re new to spices, start with less cayenne and gradually increase as you get accustomed to the heat.
  4. Marinate if Possible: For more depth of flavor, let the shrimp sit in the spice blend and sauce for at least 30 minutes before cooking.
