Ingredients
  

For the Pinto Beans:

  • ½ teaspoon sea salt
  • 6 cups fresh water more if needed during simmering
  • ¼ small white onion left in a chunk for easy removal
  • 1 pound dried pinto beans about 2 cups, rinsed
  • 1 bay leaf whole

For the Charro Beans:

  • ½ teaspoon smoky paprika
  • 1 teaspoon chicken bouillon granules
  • 1 fresh jalapeño or serrano chile seeded and chopped
  • ½ to 1 chipotle in adobo minced (optional, for added smoky heat)
  • 5 ounces of spicy chorizo or use 2 chopped sausages or hot dogs
  • 5 slices thick-cut bacon diced
  • ½ yellow onion finely chopped
  • 1 cup of cubed ham or cooked sausage of choice
  • 1 cup fresh cilantro chopped (about ½ bunch)
  • 2 ripe tomatoes diced
  • ½ cup diced green bell pepper
  • ½ teaspoon ground cumin
  • Salt and freshly cracked pepper to taste
  • ¼ teaspoon liquid smoke
  • 3 cloves garlic minced
  • ½ teaspoon dried Mexican oregano

Instructions
 

Step 1: Prepare the Pinto Beans

  • Firstly, rinse your dried pinto beans under running water. This helps remove any debris. Next, add the beans into a large pot with the fresh water. Toss in the sea salt, bay leaf, and a chunk of white onion.
  • This onion will provide flavor and can be removed afterward. Bring everything to a boil, then reduce the heat and let it simmer for about 1 to 1.5 hours until the beans are tender, but not mushy. You may need to add more water if it evaporates too much.

Step 2: Prepare the Flavor Base

  • Once your beans are tender, the next step is to build the flavor base. In a separate skillet, cook the diced bacon over medium heat until it’s crispy—this step adds a glorious smoky flavor. Once it’s crisped up nicely, remove it from the pan but leave the fat behind. In the same pan, add the chorizo and cook until it’s browned.

Step 3: Sauté the Vegetables

  • Next, add the finely chopped yellow onion to the skillet. Sauté it until soft and translucent. Toss in the minced garlic and jalapeño; cook for another minute until fragrant, making sure not to let the garlic burn. This base will add depth, richness, and a hint of spice to the beans.

Step 4: Combine Everything Together

  • Now that your beans are ready and your flavor base is cooked, it’s time to mix them. Carefully add the chorizo, bacon, and sautéed vegetables directly to your pot of beans. This method ensures every bit of flavor is incorporated.

Step 5: Add Seasoning and Simmer

  • Stir in the cumin, oregano, diced tomatoes, diced green bell pepper, and that wonderful smoky paprika. If you opted for chipotle, now is the time to add it. Stir everything well. Allow the mixture to simmer for another 30 minutes. This will give the flavors a chance to meld beautifully.

Step 6: Final Touches

  • Check for seasoning. Add salt and freshly cracked pepper to taste, along with the liquid smoke. The addition of the liquid smoke is about balancing all the flavors, making them richer and more inviting.

Step 7: Serve It Up!

  • Once everything is combined and the dish is bubbling gently, it’s time to serve. You could garnish with fresh cilantro on top for a pop of color and freshness. Enjoy your charro beans alongside tortillas, or enjoy them solo.

  • Use Fresh Ingredients: Fresh herbs and spices will provide a more vibrant taste. You’ll notice the difference.
  • Cook Ahead: Charro beans taste even better the next day. Don't hesitate to make them in advance.
  • Balance Flavors: Taste as you go! Add more cumin, or swap in smoked paprika to suit your preference.
  • Experiment with Meats: Try using different meats based on what you have. Chicken sausage or even bacon alone will do nicely.
  • Adjust the Heat: If you want more spiciness, leave the seeds in the jalapeños, or add a bit of cayenne pepper to the mix.
