Growing up, nothing smelled quite like my grandmother’s cowboy beans brewing in the slow cooker. The mouthwatering aroma would waft through the house, drawing in family and friends alike.

Ingredients
  

  • 1 pound crispy bacon chopped
  • 1 large onion finely chopped
  • 2 pounds lean ground beef
  • 1 can sweet pork and beans
  • 1 can pinto beans
  • 2 cans Great Northern beans
  • 1 can baked beans
  • 1 cup tomato ketchup
  • cup packed brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika

Instructions
 

Step 1: Brown the Bacon

  • Start by heating a large skillet over medium heat. Add the chopped bacon and cook until crispy. This will take around 5-7 minutes. Keep an eye on it, as nobody likes burnt bacon! Remove the bacon from the skillet and let it drain on a paper towel.

Step 2: Sauté the Onions

  • In the same skillet, use the leftover bacon fat to sauté the chopped onion. Cook for about 3-4 minutes or until the onions are soft and translucent. This will soak up that flavor left behind by the bacon, adding more depth to your dish.

Step 3: Brown the Ground Beef

  • Next, in with the ground beef. Cook until it is browned completely, which should take about 8-10 minutes. Make sure to crumble the beef as it cooks for an even texture. Drain any excess fat.

Step 4: Combine the Beans

  • Now it’s time to add the hero of the meal—the beans! In a large pot, combine the cooked bacon, sautéed onions, and browned beef with all the beans (sweet pork beans, pinto beans, Great Northern beans, baked beans) that you’ve drained and rinsed.

Step 5: Mix in the Sauce

  • In a measuring cup, whisk together the ketchup, brown sugar, Dijon mustard, and smoked paprika. Pour this sauce over the combined meats and beans.

Step 6: Simmer and Serve

  • Stir everything together well. Lower the heat and let it simmer for about 30 minutes. This allows flavors to meld and creates a rich, hearty dish. After you’re done simmering, give it a taste. Adjust seasoning if necessary.

  • Bacon Substitution: If bacon isn't your thing, consider turkey bacon or even leave it out entirely for a lighter version.
  • Beef Options: Ground turkey or chicken can easily replace the beef if you want something leaner.
  • Spice It Up: Add jalapeños or chili powder for some heat if you enjoy a kick.
  • Make-Ahead: This dish can be prepared a day in advance. Let it cool before refrigerating and reheat it slowly.
