There’s something magical about waking up to the promise of a freshly made Belgian waffle. As I stand in my kitchen with a bit of flour dusting my fingers, I can almost hear the familiar clinks of plates at IHOP.

Ingredients
  

  • 1 tablespoon baking powder
  • 2 cups all-purpose flour
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup melted unsalted butter
  • 1 tablespoon honey
  • 1 3/4 cups whole milk
  • 1 teaspoon pure vanilla extract

Instructions
 

  • Start by getting your mixing bowl ready. In a large bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon. Make sure there are no lumps.
  • In another bowl, beat the eggs lightly. Add melted butter, honey, milk, and vanilla extract. Whisk until everything’s combined.
  • Pour the wet mixture into the dry ingredients. Gently fold the mixture together until just combined. Remember, a few lumps are fine. Avoid overmixing; this ensures your waffles remain fluffy!
  • While you let the batter rest for a few minutes, preheat your waffle iron according to the manufacturer’s instructions. Some irons require a light brush of cooking spray; check this before pouring the batter.
  • When your waffle iron is hot, ladle the batter onto the center of the iron. Be careful not to overfill, as the batter will spread. Close the lid and cook until the waffles are golden brown and crisp. This usually takes about 5 minutes, but keep an eye on them.
  • Once ready, carefully remove the waffles with a fork. Serve them right away! Top off with your favorite fruits, syrups, or whipped cream for a decadent breakfast.

Notes

  • Don’t Overmix: Remember, a few lumps in the batter are okay. Too much mixing will make the waffles dense.
  • Rest the Batter: Allowing the batter to sit for a few minutes can lead to air bubbles forming, making for fluffier waffles.
  • Use a Hot Iron: Ensure your waffle iron is fully preheated. A hot surface creates that perfect crispiness!
  • Keep Cooked Waffles Warm: Place cooked waffles on a baking sheet in a warm oven while you finish making the rest.
  • Make Extra Batter: If you're cooking for a crowd, make extra batter and store leftovers in the fridge for later use.
