  • Grab a mixing bowl and whisk together the flour, baking powder, baking soda, and ground cinnamon. It’s essential to combine these well to ensure even rising.
  • In another bowl, mix the milk, canola oil, egg, and vanilla extract. Whisk this blend until it’s well-combined.
  • Slowly add your wet mixture to the dry ingredients. Stir gently. Overmixing can lead to dense pancakes, and nobody wants that. Just mix until everything is moistened—some lumps are okay.
  • Grab a skillet or griddle. Preheat it over medium heat. You may want to add a small amount of oil or butter to prevent sticking.
  • Pour about 1/4 cup of batter onto the heated surface. Cook until bubbles form on the surface—about 2-3 minutes. Flip once the bottoms are golden brown. Cook the other side for about 2 minutes.
