  • 1 large egg beaten
  • 1 1/4 cups all-purpose flour

  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons granulated cane sugar
  • 4 oz whipped cream topping
  • 1 tablespoon lemon zest
  • 1/2 cup confectioners' sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 8 oz cream cheese softened
  • 1/4 cup semi-sweet chocolate chips
  • 1 lb fresh strawberries quartered

Instructions
 

  • In a mixing bowl, combine the pancake mix with the required liquids as per package instructions. If you’re feeling adventurous, adding a splash of vanilla or a pinch of cinnamon can elevate the flavor.
  • Preheat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour in a ladle of pancake batter, forming a large round pancake. Cook until bubbles form on the surface, then flip to cook the other side until golden brown. Repeat for the remaining batter.
  • While the pancakes are cooking, scramble some eggs in a separate pan. Add diced vegetables and cheese of your choice. Cook until the eggs are fully set but still creamy. For added flavor, sprinkle with salt and pepper.
  • Take a pancake and place a generous spoonful of the egg mixture in the center. Fold the pancake over to form a taco shape. If desired, add toppings such as salsa, syrup, or fruit.
