Equipment

  • Mixing bowl
  • Skillet

Ingredients

  • 2 pounds top sirloin steak diced into 1½-inch cubes
  • 2 tablespoons avocado oil or extra virgin olive oil
  • 1 teaspoon kosher sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon garlic granules
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried thyme

Instructions

  • In a mixing bowl, add the avocado oil, Worcestershire sauce, garlic granules, smoked paprika, dried thyme, salt, and pepper. Whisk these together until well combined. This marinade will nourish the steak with flavor, making every bite delightful.
  • Cut the sirloin steak into evenly sized cubes. Tumble the steak pieces into the bowl with the marinade. Use your hands or a spoon to ensure each piece is well-coated. Cover the bowl or place it in a resealable bag and let it marinate in the refrigerator for at least 30 minutes. If you have time, let it marinate for a few hours for even richer flavor.
  • Place a large skillet over medium-high heat. Allow it to heat up nicely. A hot skillet is crucial for achieving a nice sear on the steak tips.
  • Once the skillet is hot, add the marinated steak tips in a single layer. Be careful not to overcrowd them; you can cook them in batches if necessary. Sear the steak tips for about 4-5 minutes per side, or until they reach your desired level of doneness.
  • After cooking the steak tips, remove them from the skillet. Let them rest for about 5 minutes. This helps maintain their juiciness.
  • Now, it’s time to serve your steak tips! Pair them with your choice of sides, drizzle a bit of sauce over the top, and enjoy the savory flavors.

Notes

  • Choose the Right Cut: While top sirloin is excellent, other cuts like flank steak or tenderloin will also work well.
  • Marination Time Matters: Longer marination enhances flavor. If you can, marinate overnight.
  • Watch the Heat: High heat is great for searing. Just be careful not to burn the outside while leaving the inside raw.
  • Resting Period is Key: Don’t skip this part! It locks in moisture for a juicy experience.
  • Slice Against the Grain: For a tender chew, always cut your steak against the grain before serving.
