Ingredients
  

  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 teaspoon sea salt
  • 8 cups 1 kilogram fresh strawberries, trimmed and halved
  • 2 cups granulated sugar
  • 3 cups filtered water
  • 1 tablespoon vanilla bean paste or pure vanilla extract

Instructions
 

  • Start by washing the strawberries thoroughly. Remove the green tops and slice them in half. This will help release their juices more effectively when we cook them.
  • In a large saucepan, combine the halved strawberries, sugar, water, vanilla, and lemon juice. Stir everything together gently, ensuring that the strawberries are coated in sugar. This will help draw out their natural juices.
  • Place the saucepan over medium heat and bring the mixture to a gentle boil. Stir occasionally to help dissolve the sugar fully. Once boiling, reduce the heat and let it simmer for about 15-20 minutes. You'll notice the strawberries becoming softer and releasing their magical aroma.
  • After simmering, remove the saucepan from heat. If you prefer a smoother sauce, you can use an immersion blender right in the pot or transfer the mixture to a traditional blender. Blend until you achieve your desired consistency.
  • Let the syrup cool completely before transferring it into clean, sterilized jars. This syrup can be refrigerated for up to two weeks, but I doubt it will last that long!

Notes

  • Use Ripe Strawberries: The fresher, the better! Ripe ones will yield the best flavor.
  • Adjust Sweetness: Taste the syrup before storing. Add a touch more sugar if desired.
  • Welcome Experimentation: Feel free to add other fruits, like raspberries or blueberries, for a mixed berry syrup.
  • Thick or Thin?: If you want a thicker syrup, cook it down for a few extra minutes until it reaches your preferred consistency.
  • Check for Freshness: Always use fresh, unblemished strawberries. Trust me, it makes a significant difference.
