  • 8 slices of brioche or challah bread
  • 2/3 cup mascarpone cheese
  • 2 eggs lightly beaten
  • 3/4 cup whole milk
  • 1/4 cup powdered sugar adjust to taste for added sweetness
  • 1 tablespoon pure vanilla essence
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon almond extract for a nutty flavor
  • A pinch of nutmeg optional, for warmth
  • 1 teaspoon raw cane sugar
  • Unsalted butter for frying
  • Fresh berries of your choice
  • Maple syrup or honey for drizzling

Instructions
 

  • Start by placing the mascarpone cheese into a mixing bowl. Beat it slightly to soften, then add powdered sugar, almond extract, and a pinch of nutmeg. Mix until creamy. This luscious filling is going to be the heart of your French toast.
  • Take a slice of your brioche or challah bread. Spread a generous amount of the mascarpone mixture on one side. Place another slice on top, creating a sandwich. Repeat this process until all slices are used.
  • In a separate bowl, whisk together the eggs, milk, vanilla essence, ground cinnamon, and a pinch of salt. This egg mixture will help bind everything together and create that custardy texture.
  • Heat up a non-stick skillet over medium heat and add a bit of unsalted butter. Once melted, take your assembled sandwich and dip it into the egg mixture briefly on both sides. Avoid soaking it too long; you want it to absorb just enough custard without becoming soggy.
  • Place the dipped sandwich on the hot skillet. Allow it to cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat this process with the remaining sandwiches. Make sure to add more butter as needed.
  • Once cooked, transfer the stuffed French toast to a plate. Top it off with fresh berries, a sprinkle of raw cane sugar, and a generous drizzle of maple syrup or honey.

Notes

  • Use Day-Old Bread: Stale bread holds up better in custard. Fresher bread absorbs too much moisture and can become soggy.
  • Customize Your Filling: Add chocolate chips, nuts, or even fresh fruit to the mascarpone for added flavor.
  • Control the Heat: Make sure your skillet isn't too hot to prevent burning while ensuring even cooking.
  • Make Ahead: You can prepare the sandwiches in advance. Just store them in the refrigerator and cook when ready to serve.
  • Experiment with Toppings: Don’t be shy! Use whipped cream, nut butter, or yogurt—a little creativity can transform the dish.
