Let me share a delightful experience I had at Nobu, a renowned culinary destination. Among their menu, one dish stood out—the Brussels sprouts.

Ingredients
  

  • 1 Tbsp miso paste chickpea miso is a great soy-free option; check for gluten-free if needed
  • 2 Tbsp rice vinegar or substitute with apple cider or white wine vinegar
  • 1 Tbsp maple syrup
  • 1 pinch sea salt
  • 1 tsp sesame oil
  • Brussels Sprouts:
  • 5 cups Brussels sprouts outer leaves peeled, large stems trimmed, halved (or quartered if oversized; approximately 1 lb yields ~5 cups)
  • 2 tsp avocado oil
  • 3/4 tsp sea salt or to taste
  • 1/4 tsp freshly cracked black pepper
  • 5 whole garlic cloves skins removed and smashed or halved
  • 1 tsp lemon zest
  • For Cooking:
  • 2 Tbsp avocado oil

Instructions
 

  • In a small bowl, whisk together the miso paste, rice vinegar, maple syrup, and sesame oil. Ensure the ingredients blend into a smooth mixture. This glaze will serve as the flavorful crown to our Brussels sprouts.
  • Preheat your oven to 400°F (200°C). This temperature is essential for achieving that delightful caramelization on the Brussels sprouts.
  • Wash and trim the Brussels sprouts. Halve or quarter them based on their size. In a large bowl, toss the sprouts with 2 teaspoons of avocado oil, salt, and pepper. The oil helps with roasting and ensures they achieve that desirable crispiness.
  • Now, add the whole garlic cloves to the bowl. Smash them slightly to release their flavor. This addition adds an aromatic punch that elevates the dish immensely.
  • Spread the Brussels sprouts and garlic evenly on a baking sheet lined with parchment paper. This makes for easier clean-up later. Roast them in the preheated oven for about 20-25 minutes, or until the sprouts are golden brown and tender. Halfway through, give them a toss to ensure an even roast.
  • Once the Brussels sprouts are roasted, remove them from the oven and drizzle the miso glaze over them. Toss everything together to coat evenly. Return to the oven for an additional 5 minutes. This extra time allows the glaze to caramelize and intensify flavors.
  • After the final roast, remove the sprouts from the oven. Sprinkle lemon zest over them, adding brightness to the dish. Your Nobu-style Brussels sprouts are now ready to be served!

Notes

  • Use different types of vinegar to vary the flavor. Apple cider vinegar adds sweetness while white wine vinegar offers a sharper edge.
  • Substitute maple syrup with honey or agave nectar if not vegan.
  • Be careful with salt. Miso can be salty, so taste before adding too much.
  • If you prefer a bit of heat, add red pepper flakes to the mixture for a spicy kick.
  • Experiment with other vegetables! This method works well with cauliflower or broccoli.
