Nobu Cucumber Salad Recipe

Carolyn Richardson
Let me tell you a story about the first time I tried Nobu's cucumber salad. Picture this: a bustling restaurant, where the energy buzzes with conversation and the aroma of fresh food dances in the air.

Equipment

  • Large mixing bowl

Ingredients

  • 1 clove garlic finely minced
  • 3 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon chili oil
  • 1 teaspoon toasted sesame oil
  • 12 ounces small cucumbers thinly sliced
  • cup roasted peanuts roughly chopped
  • Fresh cilantro leaves to taste
  • Red chili flakes to taste
  • 1 tablespoon lime juice optional, for added citrus freshness

Instructions

  • Start by making the dressing. In a bowl, mix together the minced garlic, soy sauce, rice vinegar, granulated sugar, chili oil, and toasted sesame oil. Stir them gently until the sugar dissolves.
  • Grab your cucumbers and slice them thinly. I usually opt for small cucumbers, as their crispness shines through. You can use a sharp knife or a vegetable peeler if you want a different texture.
  • In a large mixing bowl, toss the sliced cucumbers with the chopped roasted peanuts. This is where it starts to get colorful! The greens of the cucumbers and the earthy tones of the roasted peanuts make for a visually appealing mix.
  • Pour the dressing over the cucumber and peanut mixture. Gently toss everything together, ensuring that each cucumber slice is coated in that lovely dressing.
  • Finally, sprinkle in fresh cilantro leaves and a pinch of red chili flakes according to your taste. If you enjoy citrus, a squeeze of lime juice enhances the freshness even further.
  • Let the salad sit for about 15 minutes. This resting time allows the flavors to meld beautifully. When ready to serve, it’s best enjoyed chilled.

Notes

  • Choose the Right Cucumbers: Opt for English cucumbers. Their flavor is sweeter, and they are less watery.
  • Chill Before Serving: This salad is even better when served cold. Prep it a few hours ahead of time and let it chill in the refrigerator.
  • Experiment with Crunch: Swap out peanuts for cashews or even sunflower seeds for a different nutty flavor.
  • Fresh Herbs Matter: Fresh cilantro is key for authenticity, but you can also try mint or basil for an exciting twist.
  • Taste Your Dressing: Before tossing your salad, take a moment to taste your dressing. Feel free to adjust the ingredients to suit your palate. More sugar? A touch more soy sauce? Don’t hesitate to experiment!
