  • 12 rib or loin lamb chops approximately 2½ pounds; ask the butcher to "French" the rib chops (trim and scrape the top portions of the bones)
  • ¼ cup roughly chopped fresh rosemary
  • 4 cloves garlic peeled and lightly smashed with the side of a knife

Instructions
 

  • In a bowl, combine the olive oil, garlic, rosemary, salt, pepper, and optional balsamic vinegar and lemon zest. Whisk together until well blended. Your kitchen should start smelling heavenly.
  • Place the lamb chops in a resealable plastic bag or a shallow dish. Pour the marinade over the chops. Make sure each chop gets well coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least an hour or up to overnight. Trust me, the longer they marinate, the better!
  • Get that grill fired up! Aim for medium-high heat. If you're using a grill pan, make sure it’s hot before you add the chops. This ensures those beautiful char marks.
  • Once your grill is ready, place the marinated lamb chops on it. Cook for about 4-5 minutes on each side for medium-rare. Use a meat thermometer to check the doneness. Aim for an internal temperature of 130°F (54°C).
  • After grilling, it’s crucial to let the lamb chops rest for about 5-10 minutes. This allows the juices to redistribute. You want every bite to be succulent, after all.
  • Plate your beautiful lamb chops and drizzle with additional olive oil if desired. Serve with your chosen sides, and delight in the satisfied smiles at your table.

  • Use quality meat: Opt for grass-fed lamb chops whenever possible. The flavor is so much richer.
  • Don’t skip marination: Even a short time in the marinade pays off. It allows those flavors to permeate the meat.
  • Let them come to room temperature: Before cooking, let your chops sit out for 30 minutes. This ensures even cooking.
  • Monitor the temperature: Invest in a meat thermometer. Overcooked lamb can ruin the meal.
