- 3 tablespoons unsalted butter melted
- 1 tablespoon white miso paste
- 1 tablespoon garlic-infused chili oil any chili oil can be substituted** optional
- 1 teaspoon soy sauce for added umami
- 2 packs dried ramen noodles or any wheat-based noodles
- 2 stalks of spring onion finely minced
- 1 large egg
- 1 teaspoon spicy chili oil I used Momofuku, but any variety works
- 1 pinch of sesame seeds for added texture and nuttiness, optional
- 1 teaspoon toasted sesame seeds for extra flavor and crunch
- Finely chopped green onion
To achieve that rich base, melt the butter in a small saucepan over medium heat. Once melted, add the white miso paste and stir until it's well combined. This will create a flavorful miso mixture that will form the backbone of your broth.
Boil water in a large pot. Once it’s at a rolling boil, toss in your ramen noodles. Cook according to package instructions, usually around 3 to 4 minutes, until they are al dente. Drain and set aside.
Add the chili oil and soy sauce to the miso mixture in your saucepan. Stir it up! Incorporate the cooked noodles and the finely minced spring onion into the broth. This is where the flavors begin to meld together beautifully.
In a small skillet, heat a teaspoon of spicy chili oil over medium heat. Crack the egg and cook to your preference—soft and runny, or firm. Sprinkle with a pinch of sesame seeds as it fries to add depth.
In a large bowl, pour in your ramen and broth mixture. Top it with your fried egg and a sprinkle of toasted sesame seeds and chopped green onion. The visual is just as important as the taste, so make it look beautiful!
