  • A touch of butter or a drizzle of extra virgin olive oil for the pan

Instructions
 

  • Start by gathering all your ingredients. Crack the eggs into a bowl, add the Greek yogurt, chopped chives, smoked paprika, salt, and pepper. Whisk until everything is well combined. You want a lovely blend of colorful ingredients.
  • Place a non-stick skillet over medium heat. Add a touch of butter or a drizzle of olive oil. Allow it to melt and coat the base. The pan should be hot enough to get the eggs cooking quickly but not so hot that they burn.
  • Once the butter is melted and bubbling, pour in your egg mixture. You should hear a gentle sizzle. This is a good sign things are cooking.
  • Use a spatula to continuously move the eggs around the pan. This action prevents them from sticking and ensures an even scramble. You’ll want to do this gently; don’t rush. This process should take 3-4 minutes.
  • When the eggs are just set and still slightly soft, remove them from the heat. They will continue to cook slightly after being taken off. Remember, you want them creamy, not dry.
  • Spoon your beautiful scrambled eggs onto a plate, and enjoy them as is or with your favorite sides!
